Cold tomato capellini with shaved snow ice
This cold pasta is inspired by Niseko’s powder snow. The pasta is covered with fluffy snow ice made by freezing tomato juice from Yamashita Farm in Niseko-cho.
Rusutsu Yotei pork becon and egg hamburger steak plate
This luxurious one-plate dish features a juicy hamburger steak made of 100% beef topped with bacon from Rusutsu Yotei Pork, a Hokkaido brand pork, and a fried egg. The chef’s specialties are also used in this dish, with plenty of Hokkaido vegetables for garnish.
